Top New Forest chef looks forward to two of the region’s most popular summer events

The Montagu Arms’ talented new head chef will be showcasing his skills at two of Hampshire’s biggest events this summer.

Montagu arms head chef looking forward to leading summer events in the New ForestMatthew Whitfield, who joined the luxury country house hotel’s Terrace restaurant fresh from the three-Michelin-star Eleven Madison Park in New York, will be cooking in the demonstration kitchens of both the New Forest Show on July 31, and the Lymington Seafood Festival on August 11.

Visitors to both events will also get the chance to meet Matt and chat to him about his food.

For the New Forest and Hampshire County Show, which runs from July 30 to August 1, Matt will cook a smoked fillet of chalk stream trout with Hampshire watercress, pine nuts and lemon. On stand, he will be serving beef brisket in a warm flatbread scented with rosemary, with Hampshire watercress and a rapeseed oil mayonnaise.

Montagu Arms head chef Matthew WhitfieldFor the Lymington Seafood Festival at Bath Road Park on August 10 and 11, Matt will demonstrate grilled lemon sole with sea shore vegetables and crème fraiche. On stand, visitors can try crispy sardines in ciabatta with sea purslane, with a wine chosen to complement the dish.

Matthew has worked for a succession of Michelin-starred restaurants across Europe, including the three-star Eleven Madison Park – a previous No1 on the World’s Best Restaurant list – the two-star Sea Grill in Belgium, and the one-star Driftwood restaurant in Cornwall.

He champions modern British food, creating innovative, light dishes that reflect the natural flavours of fresh, seasonal ingredients.

At the award-winning Terrace restaurant, Matthew has access to carefully selected suppliers across the New Forest’s coast and countryside, and harvests the freshest fruit, herbs and vegetables from the hotel’s own kitchen garden.

The New Forest is home to some of the finest artisan food producers, chefs and restaurants in the country, and both the New Forest Show and the Lymington Seafood Festival will be featuring some of the best at a range of stalls and special demonstration kitchens.

Matt will be cooking at 2.30pm on July 31 at the New Forest Show, and noon on August 11 at the Lymington Seafood Festival.
