Almond and lemon cake

New cake recipe for August, from Real Food in the New Forest

A lovely, easy, summery, recipe from Fiona Hill of Real Food: it can be baked in the round or in tray bake format for easy packing for picnics and the beach!

As Fiona says: "By cooking the whole lemon and pureeing but not until quite smooth, you get the full flavour and sharpness of the lemon, whilst it also adds moisture, and texture too."almond lemon cake

For an 9 inch round or square tin you will need:

  • 1 large lemon
  • 8oz soft butter or margarine
  • 8oz caster sugar, golden if you can get it
  • 4 large eggs
  • 5oz self raising flour
  • 4oz whole almonds
  • 1/2 TSP baking powder
  • 2 extra spoons of caster sugar
  • A handful of sliced almonds for the top

First cut the lemon into 4 and place in a saucepan with enough water to cover it and simmer until the lemon is soft, about 30 mins. Take the lemon out and puree while still warm but leave it a bit chunky, keep the water and add 2 tablespoons of caster sugar to it .

Blitz the almonds in a blender leaving them a bit chunky for texture.

Now make the cake as normal blending the sugar and fat together till light and fluffy, add the eggs one at a time and then sift in the flour and baking powder.

Fold in together and then add the almonds and puréed lemon.

Turn into a lined tin and cook at 160 for about 45 mins.almond lemon cake with raspberries

As long as it is firm to touch the cake is done, as we all know some ovens will differ so that's the best way to gauge it.

Then using 4 tablespoons of  the lemon water and sugar spoon over the hot cake.

Leave to cool and enjoy with either fresh fruit and a dollop of cream or a nice cup of tea. 

This cake keeps for about a week in a tin - or till it's gone!

(Ed note: that dollop of cream turns it into a delectable dessert! Plus a couple of home grown raspberries on the side really set off all the flavours together!)
