February recipe from Real Food: Thai Green Curry

Anyone for Thai Green Curry? 

A tasty simple recipe for February from Real Food in the New Forest. 

Ed note: Chinese New Year season seems to prompt the tastebuds towards light, spicy, food. Thai Green Curry is an old favourite but made from scratch it can also be a labour of love, so Real Food Catering's version, simple whilst delectably tasty, is welcome. (If you'd prefer to just eat it, Fiona can of course cook it for you and deliver to your home or venue.)

Ingredients to serve 3-4

  • A pack of skinned boneless thighs - chopped
  • 1 onion
  • 2big cloves of garlic
  • 1 medium onion
  • 2 inches of fat fresh ginger
  • 1 dessert spoon of Thai green curry paste
  • 1 tablespoon coconut oil
  • 4 tablespoons of coconut powder
  • Salt pepper
  • 1/2 pint of chicken stock
  • Green beans 
 

Method

Real Food's thai green curry cooking

In a wok melt the coconut oil.

Add the chopped garlic ginger and onion and cook gently till soft.

Add the curry paste and cook for 3 minutes

Then add the coconut powder and mix till smooth.

Slowly add the chicken stock.

Then add the chicken and green beans and simmer for 15 minutes or until cooked.

Serve with basmati rice and coconut yogurt.
